
Vegetable and Beef Grilling Marinade
Ingredients
1 cup (250 mL) extra virgin olive oil1 tsp (5 mL) coarse sea salt
2 bay leaves
3 sprigs thyme
2 cloves garlic, minced
Juice of 1 lemon
1/2 cup (125 mL) white wine vinegar
1 tbsp (15 mL) Dijon mustard
Vegetables such as peppers, mushrooms, onions, eggplant, asparagus, green onions, green or yellow beans, or your favourite cut of beef for grilling
Directions
Place all marinade ingredients in a medium bowl and whisk until combined. Pour over beef or vegetables. Toss and allow to marinate in refrigerator for about 30 minutes.
Makes enough marinade for 4-6 servings of vegetables or 2 servings of beef.
