Turkey Nachos

Ingredients

1            bag tortilla chips

1            pound (500 g) freshly-cooked turkey thighs

1            green pepper, finely diced

¼          red onion, finely diced

1            cup (250 mL) grilled corn
              niblets (See steps below)

1            16oz (500 g) can black beans, drained

3           green onions, finely chopped

1            cup (250 mL) marble cheddar, shredded

1            ½ cups (375 mL) homemade BBQ sauce, recipe (Homemade BBQ Sauce)

¼          cup (50 mL) spicy mayo, recipe below

Directions

Preheat oven to 425°F (220°C).

To assemble the nachos, line a baking sheet with parchment paper.

Spread half the tortilla chips on the baking sheet, top with half the vegetables, half the turkey meat, and half
the cheese.

Drizzle with barbecue sauce.

Top with remaining nachos, vegetables, turkey meat, and cheese.

Add another drizzle of BBQ sauce and place in the oven for 15 minutes or until the cheese is golden brown.

Remove from the oven, drizzle with more barbecue sauce and the spicy mayo.

Serve any remaining barbecue sauce on the side.

Grilling your corn: simply remove the husk, brush with olive oil and grill on your BBQ until it starts to get a bit charred, then remove from cob and set aside.
