
Sugar Moon’s Shirred Eggs and Maple Cured Ham
Ingredients
Butter
1 1/2 thin slices of ham
2 eggs
Gouda cheese, thinly sliced
Directions
Butter a French onion soup bowl or large ramekin. Cover bottom with ham slices. Break eggs on top of ham (do not pierce egg yolks). Bake in a 375°F (190°C) oven for 10 minutes. Remove from oven and completely cover top with cheese. Return to oven until cheese is melted and eggs are set to the preferred consistency.
Serve with fresh baked biscuits and pure maple butter. Makes 1 serving.
Variations: Instead of ham, a thin slice or two of smoked salmon makes a delicious dish. Swiss gruyere cheese or cheddar can replace the gouda.
