
Jamaican Patties, Brawta Style
Ingredients
Pastry
2 cup (500 mL) all-purpose flour
1 tsp (5 mL) salt
1/2 tsp (2.5 mL) sugar
1 tbsp (15 mL) curry powder
1 tsp (5 mL) turmeric, if desired
1/2 cup (75 mL) ice-cold shortening
1/2 cup (135 mL) ice-cold unsalted butter, diced into cubes
1.5 cup (375 mL) cold water
Beef Filling
1.5 lb (750 g) lean ground beef
2 tbsp (30 mL) vegetable oil
1 red onion, finely diced
2 tbsp (30 mL) green onions, sliced
2 garlic cloves, minced
1/2 tsp (2.5 mL) beef bouillon powder or paste
1/4 cup (75 mL) water
1 1/4 tsp habanero or scotch bonnet pepper, finely minced
1/4 cup (75 mL) flour
1 1/2 tsp (7.5 mL) curry powder
1 tsp (5 mL) allspice
1/2 tsp (2.5 mL) garlic powder
1/4 tsp (1 mL) cayenne pepper
1/2 tsp (2.5 mL) smoked paprika
1/2 tsp (2.5 mL) onion powder
1/4 tsp (1 mL) ground or fresh
thyme
Salt and pepper to taste
1 egg, beaten
Directions
Pastry
In a large bowl, add flour, curry, salt, and sugar and stir to combine. Using a pastry blender or fork, cut in butter, and shortening. Add water 1/2 cup at a time and stir until flour turns into a ball.
The dough should be a bit sticky.
Place dough into a large glass bowl and dust lightly with flour. Cover with plastic wrap and chill in refrigerator while making your filling.
Filling
In a large skillet over medium heat add vegetable oil. Sauté onions until softened, 2-3 minutes. Add garlic and cook until fragrant.
Add ground beef, peppers, soy sauce, and all seasonings. Using a wooden spoon or spatula, break beef up into fine texture and cook until browned. Drain most of liquid from meat leaving about two tablespoons in the skillet. Return skillet to stove, add water, and bring to a quick boil, then add beef bouillon, stir well, add flour, and mix again. The mixture should be a bit moist. Let beef cool for half an hour.
Cut pastry into 8 equal parts. Flatten each into a 6-inch (15-cm) circle.
Add equal amounts of beef filling to the half side of each circle of dough, leaving some room free around the edges. Brush egg wash around edges of flattened dough. Fold and seal using a fork to crimp the edges. Poke a couple holes into top of each patty. Place on a baking sheet lined with parchment paper.
Brush each patty with the beaten egg. Bake for 20-25 minutes at 400F (180C) or until crust is golden brown.
Serve hot or warm.
