Maple Tomato  Basil Chutney

Ingredients

2 cups (500 mL)       grape tomatoes, diced

2 cups (500 mL)        yellow onions, diced

1                             jalapeno pepper, deseeded and chopped

1 tbsp (30 mL)          butter

¾ cup (175 mL)        apple cider vinegar

1 tsp (5 mL)             Dijon mustard

¾ cup (175 mL)       brown sugar

¼ cup (50 mL)         maple syrup

Directions

In a large sauté pan melt butter then add onions, jalapeno pepper, and tomatoes. Sauté for 3 minutes, deglaze pan with apple cider vinegar and Dijon mustard for a few more minutes, then add brown sugar and maple. Let simmer for 30 or 35 minutes on low heat, stirring occasionally until you have a jam-like consistency. Cool, then place in a jar and refrigerate.
