Maple-Dijon Blueberry Mustard
Ingredients
2 tbsp (30 mL) Dijon mustard
1 tbsp(15 mL) whole-grain mustard
1 tbsp (15 mL) maple syrup
2 tbsp (30 mL) fresh or frozen blueberries
1 tsp (5 mL) apple cider vinegar
¼ (1.5 mL) tsp salt
A pinch of black pepper
Optional: A pinch of ground clove or cinnamon for warmth
Directions
1. In a small bowl, gently mash the blueberries with the back of a spoon or fork until they’re broken down butstill have texture.
2. In another bowl, whisk together both mustards, maple syrup, apple cider vinegar, salt, and pepper. Fold in the mashed blueberries and stir until well combined. Let sit for 5-10 minutes for flavours to meld.
3. Spoon it warm or chilled over grilled maple-blueberry sausages. It’s also great on a crusty bun or as a dipper on a charcuterie board featuring sharp cheddar or aged gouda.
