Homemade BBQ Sauce

Ingredients

2           tbsps (30 mL) olive oil

¼          cup (50 mL) minced shallots

1            jalapeno pepper, diced

½          cup (125 mL) beer

1            tsp (5 mL) prepared mustard

1            tsp (5 mL) Cajun seasoning

1            cup (250 mL) ketchup

½          cup (125 mL) molasses

½          cup (125 mL) brown sugar

Directions

Heat olive oil over medium high heat. Add shallots and jalapeno and sauté for two or three minutes. Deglaze pan with beer. Add remaining ingredients, stir until brown sugar is dissolved, and bring to a boil. Reduce to a simmer and cook for 5 minutes.

Remove from heat and set aside.
