Grilled Turkey Breast Fajitas
Ingredients
1 large turkey breast
1 tsp (5 mL) salt and
pepper mixture
2 cloves garlic, diced
½ jalapeno pepper, diced
2 medium yellow onions,
julienne
2 red & yellow peppers, julienne
1 lime, juice only
3 tbsp (45 mL) olive oil, divided
1 tsp (5 mL) chipotle sauce or hot sauce
1 tbsp (15 mL) cumin
1 tbsp (15 mL) coriander
½ tsp (2 mL) black pepper
salt to taste
Directions
Season and oil turkey breast, and cook on your grill for about 20 minutes on high heat, until medium well done (reaches 165°F (74°C) on a meat thermometer). Turn grill off and let rest before cutting on the bias. (You can also cook in a frying pan and finish in oven)
In a medium size frying pan, warm the rest of the olive oil, then sauté garlic and jalapeno peppers for 1 minute, then incorporate sweet peppers and onions and cook until translucent on mediumheat. Add cumin, coriander, hot sauce, lime juice, salt and pepper and cook until very fragrant. Add turkey to pan, cook through and voilá, you are ready
to assemble.

4-6 flour tortillas
turkey fajita mix
sour cream
salsa
cheddar cheese, grated
Finish with a sprig of cilantro (if desired) and a squeeze of lime.
