Cold Water Shrimp Canapé

Ingredients

12         Purity Cream Crackers

8           oz (250 g) cream cheese

2           tbsp (30 mL) real mayonnaise

1           tbsp (15 mL) grainy Dijon mustard

1           small shallot, finely diced

2           tbsp (30 mL) fresh dill, chopped

1           pound (500 g) cold water shrimp

Directions

In a medium size bowl whip cream cheese until soft; add shallots, dill, mayo and Dijon mustard and mix well. Add ¾ pound (375 mL) of the drained shrimp and re-mix. Add a dollop on Purity cream crackers and top with the rest of the shrimp. Finish with a bit of Cajun seasoning or pepper and fresh dill.
