Care's Hamburger Casserole
Ingredients
1 tablespoon (15 mL) canola oil
1 medium onion, chopped
2 garlic cloves, minced
1/2 cup (125 mL) fresh sliced mushrooms, or 1 can, drained
1 small green or red pepper (or combination of both), diced
1 pound (500 g) lean hamburger
1 package (225 g) Kraft Dinner
1 cup (250 mL) sour cream
1 can (19-ounce/540 mL) creamed corn
1 cup (250 mL) milk
1 cup (250 mL) grated sharp cheddar cheese
1/4 cup (50 mL) butter
1 cup (250 mL) dried bread crumbs
Directions
Heat oil in a large frying pan; add onion, garlic, mushrooms and pepper, and sauté until vegetables are limp, about 5 minutes. Remove from pan and set aside. In same pan, cook hamburger until meat is no longer pink.
Meanwhile, cook macaroni according to directions. Drain and rinse; reserve packaged cheese.
In a large casserole dish, combine sautéed vegetables with hamburger and macaroni. To this mixture add sour cream, creamed corn, milk, half the packaged cheese and 1/2 cup (125 mL) cheddar cheese. Mix well.
Melt butter; combine with bread crumbs and remaining half package of cheese. Sprinkle over top of casserole. Top with remaining 1/2 cup (125 mL) cheddar cheese.
Bake at 350°F (180°C) for 20 to 30 minutes, or until heated through and nicely browned on top.
Makes 4 to 6 servings.
