Bok Choy Salad

Ingredients

Greens
1      bunch bok choy
1     bunch green onion

Dressing
½     cup (125 mL) olive oil
¼     cup (50 mL) apple cider vinegar
2     tbsp (30 mL) low sodium soya sauce
¾     cup (175 mL) brown sugar (or less, to taste)

Noodle mix
½     cup (125 mL) diced almonds
¼     cup (50 mL) sesame seeds
3     tbsp (45 mL) olive oil
1     package Mr. Noodles, crumbled (noodles only)

Directions

Rinse and dry bok choy. Break up leaves and chop stalks. Chop green onion into medium-sized chunks.

Combine dressing ingredients. Boil for 2 minutes; allow to cool. Brown noodle mix items in a frying pan.

Just before serving, combine the noodle mix and dressing with greens. Serve immediately. Makes 8 side-dish servings.

Editor's note: "I love this salad, as do a few non-salad eaters frequently found at my table. I've had great results by reducing the sugar by 2/3, and adding chopped orange segments."
