
Blueberry, Watermelon and Sparkling Wine Soup
Ingredients
2 cups (500 mL) fresh wild blueberries½ cup (125 mL) dry sparkling white wine
12 leaves fresh mint, chopped
½ cup (125 mL) honey
Juice of 1 medium lime
½ cup (125 mL) whipping cream
2 cups (500 mL) cubed seedless watermelon
Mint for garnish
Directions
Rinse blueberries under cool water. To a blender or food processor, add the berries and ¼ cup (50 mL) of the wine, half of the mint, ¼ cup (50 mL) of the honey and half of the lime juice. Pulse until puréed; add ¼ cup (50 mL) of the whipping cream and stir with a fork. Cover and refrigerate for 1 hour.
Repeat this process with the watermelon and remaining ingredients: To a blender or food processor, add the watermelon and the remaining half of the wine, mint, honey and lime juice. Pulse until puréed; add the remaining whipping cream, and stir with a fork. Cover and refrigerate for 1 hour.
Serve each mixture separately in small glasses; allow your guests to pour each half into an empty bowl, and stir with a spoon; garnish with mint. Makes 4 servings.
