Blueberry gin sour

Ingredients

Blueberry syrup
1 cup (250 mL) blueberries (fresh or frozen)

½ cup (125 mL) white sugar

1 cup (250 mL) water

Cocktail
1 egg white

1½ oz (45 mL) blueberry syrup

1 oz (30 mL) fresh lemon juice

2 oz  (60 mL) gin 

Directions

To make syrup, combine ingredients in saucepan and bring to a boil. Reduce heat and let simmer for about 10-12 minutes, and strain, pressing the juices out of the berries. Let cool completely.

To make cocktail, combine all ingredients in a shaker full of ice. Shake vigorously for 10-15 seconds and strain into a coupe cocktail glass. Garnish with a blueberry skewer and 
a sprig of thyme.
