Balsamic Dressing
Ingredients
6 tbsp (90 mL) balsamic vinegar
1 cup (250 mL) pomace oil or low-grade olive oil
1 shallot, diced
1 tbsp (15 mL) smooth Dijon mustard
Salt to taste
Directions
Combine all ingredients in a blender and blend until smooth. Strain and salt to taste.
Yield: 500 ml.
