Shirley MacLeod, Kensington, PEI - Caramelized Onion & Mushroom Quick Pizza
Shirley is an avid cook. One Sunday morning she decided to prepare lunch for her mom and sister and thought pizza would be a nice treat. She had made pizza with caramelized onions in the past as it was a personal favourite; but this recipe came about when she realized that she had no traditional pizza sauce in the house. She went with what she had on hand, a three-cheese salad dressing—and a new family favourite was born.
