
Green Goddess Sandwich
Ingredients
4 slices grainy sourdough
1 avocado
½ cup (125 mL) goat cheese
handful fresh basil
zest of 1 lemon
¼ tsp (1.5 mL) salt
2 tsp (10 mL) honey
alfalfa sprouts
2 radishes, thinly sliced
¼ cucumber, thinly sliced
4 tbsp (60 mL) hummus
Directions
Mix goat cheese with honey, lemon zest, and finely chopped basil. Toast bread lightly. Spread goat cheese on one slice of bread, and hummus on the other. Layer avocado, cucumber, radish, and sprouts. Season with salt and pepper. Close sandwich, wrap tightly in parchment, and slice in half. Wrap again for easy transport.
