Ingredients

1          lb (450 g) Atlantic salmon, fileted

2          tsp (10 mL) olive oil

2          tsp (10 mL) Cajun spice seasoning 

2          tsp (10 mL) honey

Cajun Seasoning
1          tsp (5 mL) onion powder

1          tsp (5 mL) garlic powder

1          tsp (5 mL) sea salt

1          tsp (5 mL) paprika

1          tsp (5 mL) ground black pepper

1          tsp (5 mL) cayenne pepper

1          tsp (5 mL) dried oregano

1          tsp (5 mL) dried thyme

1          tsp (5 mL) red pepper flakes

Directions

To make Cajun Seasoning, combine all ingredients in a bowl and mix until well blended. Store seasoning in an airtight container or jar in a cool, dry place.

To prepare salmon, heat oven to 400F/205C degrees.

Rub olive oil over the top of salmon and liberally coat it in Cajun seasoning.

Heat a large pan on medium heat. Add the salmon, flesh-side down, and sear until golden brown — about 30 seconds to a minute. Flip over and place into the oven.

Bake until the fish flakes easily, for about 2 to 5 minutes, depending on the thickness of your salmon. Cover and let stand for 10 minutes.

Drizzle with honey.
