1 lb (500 g) smoked fresh ham, cubed
1 Honeycrisp apple, diced
1/4 cup (50 mL) butter, cubed
2 green onions, sliced
1 clove garlic, minced
1 sprig of fresh parsley
1 tbsp (15 mL) mayonnaise
1/4 cup (50 mL) port
1/4 tsp (1 mL) pepper
1/4 tsp (1 mL) coarse sea salt


In a food processor incorporate ham, apple and butter; mix well until puréed, about 4-5 minutes. One by one, add remaining ingredients; continue to mix until smooth. Place purée in a terrine or bowl; refrigerate for 1 hour.

Serve with chutney, crackers, sliced vegetables and crusty bread. Makes 4 to 6 servings.
