Roasted Nova Scotia Apple Salad

Ingredients

2-3 medium apples (Cortland, Gravenstein, or Jonagold work well) chopped in large cubes, leaving the peel

1 tsp (5 mL) cinnamon

½ cup (125 mL) goat cheese crumbles

4–5 cups (1000-1250 mL) arugula or greens of your choice

1 cup (250 mL) walnuts

¼ cup (60 mL) maple syrup

Directions

Toss apples with cinnamon and roast in oven at 350F/177C until apple just begin to soften and peel wrinkles a little, about 10-15 minutes. Chill.

Combine walnuts with maple syrup, toss together, place on parchment-lined baking pan and toast in 350F/177C oven until nuts are crisp and syrup has caramelized, about 10 minutes. Cool at room temperature.

Dressing

½ cup (125 mL) maple syrup

1 tsp (5 mL) Dijon mustard

¼ cup (60 mL) balsamic vinegar

½ tsp (2.5 mL) cinnamon

¼ tsp (1 mL) allspice

1 cup (250 mL) canola oil

Blend dressing ingredients together to emulsify.

Place greens on centre of plate, crumble goat cheese on the greens, add the cooled roasted apples and maple candied walnuts. Drizzle the salad with spiced maple vinaigrette.
