Pesto Verde
Ingredients
2 cups (500 mL) greens of your choice (fresh basil, arugula, or spinach)
½ cup (125 mL) good extra virgin olive oil
1-2 garlic cloves
½ tsp (2.5 mL) salt (add more if needed at the end)
½ cup (125 mL) Parmesan
1/3 cup (80 mL) pine nuts or any nuts of your choice except peanuts
1 tbsp (15 mL) lemon juice (or to taste)
Directions
To make pesto, combine all ingredients in a blender.
