2 tbsp (30 mL) butter
1 lb (500 g) potatoes, cooked and cubed
1 lb (500 g) bologna, cubed
4 eggs
1/8 tsp (.5 mL) salt
1/4 tsp (1 mL) pepper


Melt butter in a large skillet over medium high heat. Add potatoes and bologna; sauté until crispy, about 8-10 minutes.

Break eggs into a bowl. Add salt and pepper and beat until smooth. Pour into skillet, over the potatoes and bologna, and fry until cooked. Makes 4 servings.
