1/4 lb (125 g) tender young garlic scapes
1/2 cup (125 mL) pine nuts, hazelnuts, sunflower seeds or almonds
1/2 cup (125 mL) olive oil
1/2 cup (125 mL) parmesan cheese
Juice of one lime
Salt and pepper to taste
Trim the spiny tops of the scapes and chop into manageable pieces, 2-3 in (5-7 cm).
In a food processor, blend with nuts or seeds, together with olive oil, until smooth. Empty into a bowl and stir in parmesan, lime juice, salt and pepper. Makes about 1 cup (250 mL).
Tip: this Garlic Scape Pesto can be used to add flavour to just about anything, from pasta to steamed potatoes or veggies. It can also be used as a spread on crackers, wraps or homemade pizza.
