4 slices bacon, cut into 1-inch (2.5 cm) pieces
2 medium onions, chopped
1 medium sweet green pepper, chopped
3 (19-ounce/540 mL) cans baked beans
1/2 cup (125 mL) barbecue sauce
1/2 cup (125 mL) beer, apple juice or water
In a large saucepan or Dutch oven, cook bacon, onion and green pepper over medium heat, stirring occasionally, until vegetables are softened, about 10 minutes. Drain off all but 1 tablespoon (15 mL) of drippings.
Add beans, barbecue sauce and beer, apple juice or water. Bring to a boil; reduce heat and simmer for 10 minutes, stirring frequently. Makes 6 servings.
