Big-Batch Freezer Meatballs


3     pounds (1.5 kg) lean ground beef
1     can (385 mL) evaporated milk
1     cup (250 mL) quick (not instant) rolled oats
1     cup (250 mL) soda cracker crumbs (28 squares)
2     eggs
1/2    cup (125 mL) chopped onion
1/2    teaspoon (2 mL) garlic powder
2     teaspoons (10 mL) salt
1/2    teaspoon (2 mL) black pepper
2     teaspoons (10 mL) chili powder

2     cups (500 mL) ketchup
1     cup (250 mL) packed brown sugar
1/2    teaspoon (2 mL) garlic powder
1/4    cup (50 mL) chopped onion


In a large bowl, thoroughly combine ground beef, evaporated milk, rolled oats, cracker crumbs, eggs, chopped onion, garlic powder, salt, pepper and chili powder. Your hands are the best tools for mixing this large amount of ingredients. (The mixture will be soft.)
Shape into 11?4-inch (3 cm) balls-wet hands for easier rolling-and place in single layers on baking sheets, which have been lined with wax paper. Freeze. Place frozen meatballs in plastic freezer bags and return to freezer until needed. 

When ready to bake, arrange frozen meatballs on a 13x9-inch (33x23 cm) baking pan. You may have to use more than one pan.

To make sauce, combine ketchup, brown sugar, garlic powder and chopped onion in a bowl. Pour sauce over meatballs. Bake at 350°F (180°C) for 1 hour. Makes about 110 meatballs.

Note: If using only a portion of the meatballs, you can reduce the sauce ingredients accordingly.
