2 quarts (2 L) sweet apple cider
1 1/2 cups (375 mL) granulated sugar
6 (3-inch/8 cm) cinnamon sticks, cracked
15 whole cloves
12 whole allspice
Extra cinnamon sticks for garnish
Combine all ingredients in a large saucepan and bring just to the boiling point over very low heat, stirring occasionally, until sugar has dissolved. Do not boil. Remove from heat and let stand for several hours to let flavours blend.
Strain cider; return to saucepan and heat just until hot. Serve, garnished with extra cinnamon sticks, if desired. Makes 2 quarts.
