Lemon Barbecued Meat Loaves

Ingredients

1 1/2 pounds (750 g) lean ground beef
2 cups (500 mL) diced fresh bread (about 1/2 inch/1 cm cubes)
1 egg
1/4 cup (50 mL) fresh or bottled lemon juice
1/4 cup (50 mL) chopped onion
2 teaspoons (10 mL) seasoning salt
1/2 cup (125 mL) ketchup
1/3 cup (75 mL) packed light brown sugar
1 teaspoon (5 mL) dry mustard
1/4 teaspoon (1 mL) ground allspice
1/4 teaspoon (1 mL) ground cloves
1/8 teaspoon (.5 mL) pepper
6 thin lemon slices

Directions

In a large bowl, mix well the ground beef, bread cubes, egg, lemon juice, onion and seasoning salt. Shape mixture into six individual loaves, about 4 inches x 3 inches (10 cm x 8 cm). Place in a greased 13x9 inch (33x23 cm) baking pan, allowing space between each loaf, and bake at 350°F (180°C) for 20 minutes.

Meanwhile, in a small bowl combine ketchup, brown sugar, dry mustard, allspice, cloves and pepper. Spoon mixture over loaves thoroughly, covering each one. Place a lemon slice in centre of each loaf and bake for another 30 minutes.

Makes 6 servings.
