Citrusy Couscous Salad

Ingredients

2 cups (500 mL) couscous
2 cups (500 mL) orange juice
1 cup (225 mL) toasted almond slivers
1⁄2 cup (125 mL) chopped, green onion
2 oranges, separated into segments and chopped
1⁄2 cup (125 mL) currants
1⁄2 cup (125 mL) grated carrots
1⁄2 cup (125 mL) pineapple chunks
2 tbsp (30 mL) olive oil
Juice of 1 lemon
1⁄2 tsp (3 mL) fresh ground pepper
1⁄2 tsp (3 mL) cinnamon
1 tsp (5 mL) salt

Directions

Put orange juice into a pot and bring to just below the boiling point, remove from heat, add couscous and let sit for 5 minutes.

Fluff with a fork. Add the remaining ingredients, mixing to incorporate.
