Bean and Date Muffins

Ingredients

1    cup (250 mL) cooked beans
Juice of 1 orange, plus milk to make 3/4 cup (175 mL)
1    egg
1/4    cup (50 mL) canola oil
1/2    cup (125 mL) lightly packed brown sugar
1 1/2    cups (375 mL) all-purpose flour
2     teaspoons (10 mL) baking powder
1     teaspoon (5 mL) ground cinnamon
1/8    teaspoon (1 mL) ground cloves, or more to taste
1/2    cup (125 mL) chopped pitted dates

Directions

Place cooked beans in a blender with orange juice and milk mixture; pulse until smooth. Transfer to a bowl. Add egg, canola oil and brown sugar, and beat
until smooth.

In a separate bowl, combine flour, baking powder, cinnamon and cloves. Toss in dates until coated. Lightly fold dry ingredients into bean mixture, mixing just
until moistened. Do not over-mix-batter should still be lumpy.

Divide batter between 12 greased medium muffin cups (about 2/3 full). Bake in a 400°F (200°C) oven for 15 to 18 minutes, until muffins start to shrink from
pan and a tester inserted in centre comes out clean. Makes 12 muffins.
