Smoked Mackerel Dip

8 oz (250 g) cream cheese
1/2 lb (250 g) smoked mackerel
1 tbsp (15 mL) chopped red onion
2 tsp (10 mL) chopped fresh parsley
2 tbsp (30 mL) sour cream
1/2 tsp (2 mL) fresh ground pepper
1 tsp (5 mL) fresh lemon juice


Divide brick of cream cheese into six chunks and place in a food processor. Add the mackerel, onion and parsley; pulse for a few minutes to combine. Add sour cream, pepper and lemon juice, and process for 2-3 minutes until smooth.

Place in a container and refrigerate. Serve with your favourite breads, crackers, vegetables or even potato chips.
