Chilled Cantaloupe Soup

Ingredients

  • 2 cantaloupes, peeled and cubed
  • 1/3 cup (75 mL) sugar
  • 2 oz (57 g) Ironworks Arctic Kiwi Liqueur
  • 2 tbsp (30 mL) fresh squeezed lime juice
  • 1 tsp (5 mL) coarse sea salt
  • 4 tsp (20 mL) sour cream
  • 1 fresh mint sprig

Directions

  1. Place cantaloupe in a food processor or blender. 

  2. Add sugar, liqueur, lime juice and salt.

  3. Purée. 

  4. Chill for one hour. 

  5. Place in serving bowls; top with sour cream and a fresh mint leaf. Makes 4-6 servings.
