Harvest Salad

Ingredients

1 Cortland apple, unpeeled, cored and diced
1 pear, peeled, cored and diced
2 tablespoons (30 mL) lemon juice, freshly squeezed
3 cups (750 mL) cabbage, coarsely shredded
1/4 cup (50 mL) celery, chopped
2 tablespoons (30 mL) green onion, chopped (optional)
1/4 cup (50 mL) pecans or walnuts, chopped
1/4 cup (50 mL) raisins
1/4 cup (50 mL) mayonnaise
1/4 cup (50 mL) plain yogurt
Salt and pepper to taste 

Directions

Toss diced apple and pear with freshly squeezed lemon juice to prevent browning. In a mixing bowl combine cabbage, celery, onion, nuts, and raisins. Add apple and pears to mixture. Whisk together yogurt and mayonnaise; add dressing to the fruit and vegetable mixture and toss lightly to coat. Cover salad and refrigerate for at least one hour before serving.
