Land of Fish & Plent…

How did Saltscapes get started? Journalist Eleanor Beaton looks behind the scenes. For more than 200 years, Atlantic Canada has been a promised land for many, including oppressed Scots. Of course, oppression comes in many forms—in his youth in Edinburgh, Jim Gourlay may not have endured the religious and economic...

Not on my Watch

Not on my Watch

It’s the law of the jungle: wild animals are born, and they die. But a brigade of Atlantic Canadians offers them safe haven when they’re somewhere in between, and vulnerable. When a seagull is found impaled atop a church, a deer turns up for sale on Kijiji, or a hurricane blows...

Paddling Our Own Canoe

Paddling Our Own Can…

Canoeing in the wilderness with my dad taught me
that we had much more in common than I ever imagined. Perching my digital camera on a twig stuck in the ground, I race over to where my father is standing next to a dusty, leaf-littered plaque, then grin and wait as...

The Gourlays

Hooray - rose to sunshine today and loads of prep for our friends' wedding festivities in the afternoon. Graeme Bancroft and Mel Jellett are young organic farmers living on a 90-acre property in Murray Corner, NB, in just a lovely setting.

Linda made a commitment on behalf of herself and Katharine to prepare salad (with only locally-sourced organic ingredients) for 120 or so wedding guests. Quite a challenge on a campground picnic table.

The completed 73lb salad was packed into clear plastic bags inside cooler bags, each with a bag of ice enclosed.

Then it was into the shower and on with the wedding outfit (making sure puppy poop was cleaned from all footwear).

After a solid week of rain, an absolutely perfect day materialized for this delightful young couple.  They planned, scripted and choreographed every minute of the affair themselves and it went off beautifully. Just a super, super day!

Thank You!

Hi Linda and Jim,

I'm so glad that you guys could make it. We've been getting rave reviews about the food, and I have to pass those comments along to everyone who actually made the stuff. The salads were beautiful and delicious, and what was in that dressing?

Thank you, thank you, thank you!
