In the November/December issue of Saltscapes the images on page 44 and 46 were transposed: the image on page 44 is of Jodi’s Tourtière; the image on page 46 is of mincemeat pie, using the recipe for Edgar’s Mincemeat. Similarly the cover image is a photo of mincemeat pie rather than tourtière. We apologize for the confusion.

Adopted Nova Scotian

Although I was born in Ontario, I call Nova Scotia home. My husband is from Wedgeport, NS, a small Acadian community outside of Yarmouth, and we have been going there for holidays since we were married, 26 years ago. I’m always amazed at how people down east are willing to stop and take the time to talk to you, make you a cup of tea or invite you to stay for a meal. Even walking down the main road can be punctuated with many chats. I wish to thank the people from this wonderful community for making me feel at home. We have subscribed to Saltscapes for many years—thanks for helping us keep in touch.

Grandmother Knew Best

Let me begin by saying how much my wife and I enjoy your magazine. It is so refreshing to see things from a Maritime point of view that are well and lavishly presented.
One of the things we look forward to is the number of excellent recipes that appear in each issue. Suffice to say that this is only the second dish that my wife has felt compelled to throw out in almost 50 years.

Convenient Cake Recipe

I was recently going through back issues of Saltscapes when I came upon the award-winning recipe for German Apple Cake with Brown Sugar Glaze (September/October 2007). After reading it through, I thought it was similar to my recipe for apple chip cake, which I have been making for years. This recipe was given to me by my dear friend, Eileen Frost. Eileen is well into her 80s now, and lives in the Annapolis Valley, NS.
I made the German apple cake recipe; however, I found my recipe involves far less preparation time and clean up. Here it is.

Comforted By Issues

I “so love” your magazine—I have been reading it since your premier issue. When I saw the July/August issue I first fell in love with the cover. The juicy, beautiful photo of raspberries (my favourite) caught my eye instantly. I loved the gardening article (“The Fruitful Summer”), and I tried Daryl’s Fabulous Fish Cakes (“Fate Accompli”)—the best recipe yet, and I have tried many. Each issue makes me feel comforted.
