I was recently going through back issues of Saltscapes when I came upon the award-winning recipe for German Apple Cake with Brown Sugar Glaze (September/October 2007). After reading it through, I thought it was similar to my recipe for apple chip cake, which I have been making for years. This recipe was given to me by my dear friend, Eileen Frost. Eileen is well into her 80s now, and lives in the Annapolis Valley, NS.
I made the German apple cake recipe; however, I found my recipe involves far less preparation time and clean up. Here it is.

I “so love” your magazine—I have been reading it since your premier issue. When I saw the July/August issue I first fell in love with the cover. The juicy, beautiful photo of raspberries (my favourite) caught my eye instantly. I loved the gardening article (“The Fruitful Summer”), and I tried Daryl’s Fabulous Fish Cakes (“Fate Accompli”)—the best recipe yet, and I have tried many. Each issue makes me feel comforted.

As a proud Maritimer who has been living in Toronto for the past 27 years, I am always delighted to receive my issue of Saltscapes and to catch up on the news from home. In the November/December issue, I read with great interest the article on the Newfoundland outport communities (“The People are the Place”) not only because it is well written but also because I felt it presented a novel commentary on the age-old problem of young people leaving their Atlantic homes and flocking to Toronto and Calgary to find work.

I was deeply touched by the story “Christmas at the Creamery” (November/December). It is wonderful to hear when those of different generations, and faiths, break bread together in the community. There was an egalitarian sense about this story, as roles were reversed and servers became those being served, as Christians and non-Christians alike enjoyed the feast and festivities together. Isn’t this what Christmas is about?
